Brooklyn Char in Noblesville

Brooklyn Char keeps it simple with a focused New York-style menu, offering massive, well-executed slices and indulgent stuffed breadsticks, making it a strong addition to the northside pizza scene despite its small dine-in space.
Brooklyn Char recently opened up on Hazel Dell in Noblesville. They are keeping it simple with a slim number of menu options and focusing on what they do best: New York style pizza. This new place opened up a stone's throw from Big Woods in the same shopping center, but you can never have enough pizza places - especially in our own backyard up here on the north side of Indianapolis.
We walked in for our date night hoping to dine in, and the small shop had people waiting around for their carryout orders. The counter was sorta around the corner and we didn't see it at first, but we placed our order and said we planned to eat in. They warned us it would be about an hour wait, and we said we'd wait anyway. The food ended up coming out in about 20 min so I guess the bumped us to the front of the line since we were dining in.
The interior does have a few tables, but it definitely has more of a carry out feel. I think the word is out on this place and it was very backed up but then again it was a Friday at dinner time. A couple more FYI's if you are dining in, the sodas come in cans rather than fountain, and they didn't have any silverware if you usually need that for your pizza.
We ordered a pepperoni pizza (comes in one size) and we got both kinds of breadsticks to try, we got Garlic Knots (8 knots) and Stuffed Sticks (4 huge stuffed sticks).
Both the garlic knots and the breadsticks were the same dough and came from the oven. Between the two I liked the stuffed sticks better, but man they are stuffed to the brim! I'm not kidding two stuffed sticks is like the size of a Chipotle burrito absolutely packed with pillowy melty cheese. I hope the photos do it justice, man these things were big and we ended up taking half of them home.
The sticks are served in a styrofoam container with wax paper on the bottom and marinara sauce for dipping. The bottom was drenched in garlic butter, these things are succulent and soft. They do hold together, it's not like they were falling apart or anything, but I was wishing for some silverware.

Okay the New York style pizza was massive and had that characteristic NY crust that is thin but not crispy, foldable, slightly chewy, bendable but not floppy. Big ol' slices.
The crust was on point but for me the cheese and sauce combination really sold the New York style, it has that faint aroma of school cafeteria cheese in a good way, and the sauce was light and acidic rather than too savory. Very well executed NY style to add to the list alongside Bella, Perillo's, and Amore.
We'll definitely be back, and will probably get carry out next time and like half as many breadsticks!
