Archer Farms Goat Cheese Pizza

This unassuming goat cheese pizza is the GOAT. It's been a go-to for years, with generous silver dollars of cheese as the main attraction.


I forget when I first tried this Archer Farms spinach and goat cheese pizza from Target, it was at least a couple years ago. Since then, it's been my go-to oven pizza for nights that we don't have any dinners planned ("on-your-own nights"). Chris won't go near it because he hates spinach, tomatoes, and goat cheese - so this one I have all to myself.



I know it doesn't look like much, but I seriously get this a few times a month because it's so good. I don't even know why I like it so much, the crust is pretty decent, no distinct flavor to it. There's a little bit of regular pizza sauce and regular mozzarella cheese but not too much.



The description on the website says:


This pizza features a hand-stretched, crispy, mildly smoky wood-fired crust that is layered with a tomato sauce infused with basil and olive oil, sliced tangy goat cheese, spinach, and sliced tomatoes.

I think my favorite part is biting into the huge disc of goat cheese, it's so satisfying. I haven't seen goat cheese like this at restaurants with these large portions - eating out you just end up with crumbles for a hint of it, not a whole slice.



I always cut it in a weird way, I dodge the slices of goat cheese because I don't want it to end up wasted on the pizza cutter - so I cut in curved lines if I need to in order to go around the cheese.


So yeah, now you know a little more about my obsession with this boring looking pizza that is certainly a diamond in the rough.
